How to make Kitifo

 Kitfo is a traditional Ethiopian dish made with raw minced beef, seasoned with spices and served with injera or bread. Here is a simple recipe for making Kitfo at home:

Ingredients:

  • 1 pound lean beef, minced
  • 2 tablespoons butter
  • 2 tablespoons niter kibbeh (clarified spiced butter) or ghee
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon chili flakes (optional)
  • Injera or bread, for serving

Instructions:

  1. In a large bowl, mix together the minced beef, butter, niter kibbeh or ghee, garlic, parsley, cilantro, salt, pepper, and chili flakes (if using).

  2. Using your hands, mix the ingredients together until the beef is well coated with the seasonings.

  3. Heat a large pan or skillet over high heat.

  4. Add the seasoned beef to the pan and cook for about 2-3 minutes, or until the beef is browned on the outside but still rare in the center.

  5. Serve the Kitfo hot, with injera or bread on the side. Enjoy!

Note: Because Kitfo is made with raw minced beef, it is important to use high-quality, fresh beef and to handle it carefully to avoid foodborne illness. If you are concerned about the risk of food poisoning, you may prefer to cook the beef to a minimum internal temperature of 145°F before serving.
