Injera is a traditional Ethiopian flatbread that is made from teff flour and has a unique spongy texture. Here is a simple recipe for making injera at home:

Ingredients:

  • 1 cup teff flour
  • 1 cup water
  • 1/2 tsp salt

Instructions:

  1. In a medium bowl, combine the teff flour and salt.

  2. Slowly add water to the flour mixture, stirring until a smooth batter is formed. The consistency should be similar to that of a thin pancake batter.

  3. Let the batter sit for at least 30 minutes, or up to 24 hours, to allow it to ferment.

  4. Heat a large nonstick pan or griddle over medium heat.

  5. Pour a small amount of the batter onto the pan, swirling it around to form a thin, even layer.

  6. Cook the injera for about 2-3 minutes, or until the top is no longer wet and the edges begin to curl.

  7. Flip the injera and cook for an additional minute on the other side.

  8. Remove the injera from the pan and place it on a plate. Repeat the process with the remaining batter.
